Pomegranate Champagne Cocktail


Pomegranates are said to represent good luck because of their bright red color, which is thought to denote life and fertility.
 

Pomegranate Champagne Cocktail
  • 2 cups pomegranate juice
  • 1/2 cup ginger ale
  • 1/4 cup brandy
  • 1 bottle champagne (Moet White star)
  • pomegranate seeds, garnish
Pour all ingredients into a pitcher and serve in cocktail glass and garnish with seeds.

Black Eyed Peas


A delightful side dish not to mention a New Year’s day tradition that brings good luck for the year to come. :-)

Ingredients
  • 1 pound dry black-eyed peas
  • 5 slices bacon
  • 1 teaspoon salt
  • pepper to taste
  • 1 pinch garlic powder
  • 1 medium onion, chopped
  • 1 (14.5 ounce) can diced tomatoes
  • 3 cups water
Directions
 
In a dutch oven cook bacon until crisp. Remove bacon and set aside to use as a topping. Saute onions in the bacon dripping until softened. Add the remaining ingredients and cook for 1 hour or until tender and adding water if necessary. Crumble bacon on top and serve.

Kale – Kale chips are a delicious and nutritious alternative to potato chips (see recipe)
Collard greens – Southern style with hamhocks or crispy bacon (see recipe)
Beet greens – Roasted the beets and boil the greens
Chard – Cook with olive oil and garlic and top with poached egg.
