Black Eyed Peas


A delightful side dish not to mention a New Year’s day tradition that brings good luck for the year to come. :-)

Ingredients
  • 1 pound dry black-eyed peas
  • 5 slices bacon
  • 1 teaspoon salt
  • pepper to taste
  • 1 pinch garlic powder
  • 1 medium onion, chopped
  • 1 (14.5 ounce) can diced tomatoes
  • 3 cups water
Directions
 
In a dutch oven cook bacon until crisp. Remove bacon and set aside to use as a topping. Saute onions in the bacon dripping until softened. Add the remaining ingredients and cook for 1 hour or until tender and adding water if necessary. Crumble bacon on top and serve.
