Lobster Dynamite


If you love lobster you’ll really enjoy this. It’s creamy with a bite of spice. Delicious!

Lobster Dynamite
 
Here are the Ingredients:
  • 2 pounds of lobster, chopped in bite size chunks
  • 2 cups mushrooms, sliced
  • 2 teaspoons oil
  • 2 scallions, chopped
Dynamite Sauce
  • 1/4 cup kewpie mayonnaise (Asian market)
  • 2 teaspoons sriracha (Asian market)
Make the dynamite sauce by mixing together the mayonnaise and sriracha. Saute the mushrooms in oil over medium-high heat for 3 minutes. Add the lobster and continue frying until golden brown and cooked. Mix the lobster and mushrooms with half of the dynamite sauce. Put the lobster and mushrooms into a oven-proof baking dish, top with the remaining sauce and broil on high for five minutes. Remove from the oven, garnish with scallions and serve hot.

Hawaiian Iced Tea


Nice and fruity.

Hawaiian Iced Tea

  • Tall glass, ice
  • 1/2 oz Vodka
  • 1/2 oz Gin
  • 1/2 oz Tequila
  • 1/2 oz Triple Sec
  • 1/2 oz Light Rum
  • 1 1/2 oz Pineapple Juice
  • Cranberry or Cranapple Juice
  • Cherry garnish

Pour all alcohol and pineapple juice over ice and fill with cranberry juice. Stir.

  • Tall glass, ice
  • 1/2 oz Vodka
  • 1 oz Peach Schnapps
  • Orange Juice
  • Cranberry Juice

Pour Vodka and Peach Schnapps  in the glass and 1/2 fill with OJ and 1/2 fill of cranberry. Stir.

Very refreshing!

  • Highball glass, ice
  • 1 oz Vodka
  • grapefruit juice
  • orange juice

Pour vodka over ice 1/2 fill with grapefruit and 1/2 fill with OJ and stir.

 

Electric Iced Tea / Adios MF

Electric Iced Tea / Adios MF
  • Tall glass, ice
  • 1/2 oz Vodka
  • 1/2 oz Gin
  • !/2 oz Tequila
  • 1/2 oz Blue Curacao
  • 1 1/2 oz Sweet & Sour
  • 7UP
  • Lemon garnish
Pour all ingredients into the glass and fill with 7UP.

New Beginning


I’ve decided to make a change before the New Year as I don’t want to burden myself with a New Year’s Resolution. I have done that for many years and for the most part have failed. I’m picking a date and that is the date I’m going to start.  I want to be slim and trim by the time Spring gets here in 2012. I’ve been there before and have boxes full of clothes that I’m hoping to wear again. I’m doing this not only for my size, but for my overall health and well-being . Next year will be a milestone for me. The Big Five-0!

I will be researching magazines, cookbooks, and websites for some of the best recipes and workouts. I hope that some of my followers will choose to join me along this journey. Let’s support each other so we may reach our own personal goals. So let’s start getting healthy. December 5th will be my start date.

Whipped Cream Cake with Fruit Topping

 Whipped Cream Cake with Fruit Topping

Here are the Ingredients:
  • 2 cups cake flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 cup vegetable oil
  • 1/4 cup water
  • 1 teaspoon lightly packed lemon zest
  • 2 teaspoons vanilla extract
  • 6 large eggs, separated
  • 1 1/2 cups granulated sugar
Preheat oven 350 degrees
 
Butter and flour 13x9x2 cake pan. Sift flour, baking powder, and salt together into a mixing bowl and set aside. In a large bowl combine vegetable oil, water, lemon zest, vanilla extract, egg yolks, and 1 1/4 cups of the sugar. Whip on medium speed, until mixture is airy and light in color, about 5 to 7 minutes. Turn off the mixer and scrape down the sides of the bowl. Add the dry ingredients and whip until smooth, about 1 minute more.
In a new bowl, whip egg whites to medium peaks. Add remaining 1/4 cup sugar and continue whipping until stiff peaks form, about 1 minute more. Use a rubber spatula and fold 1/4 of the egg whites into the cake batter until evenly incorporated. Gently fold in remaining egg whites until combined.
Pour the batter in prepared cake pan. Bake for 35 minutes until surface of cakes springs back when pressed and a toothpick into the center comes out clean. Let cool 15 minutes. Remove from pan onto wire rack to cool completely. Spread whipped cream over cake as you would frosting and cover with fruit topping.
 
Whipped Cream
 
Here are the Ingredients:
  • 1 cup heavy whipping cream
  • 3 tablespoons sugar
  • 1/2 teaspoon vanilla extract
Place a bowl in the freezer for 10 minutes. Beat cream in chilled bowl until it begins to thicken. Add sugar and vanilla and beat until soft peaks form.
 
Fruit
  • choose favorite seasonal fruit such as strawberries, kiwi, oranges, blueberries, raspberries, combine or separate
  • 2 tablespoons granulated sugar
  • 1 tablespoon freshly squeezed lemon juice (from about 1/2 medium lemon)
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon grated lemon zest
Place cut fruit in a glass bowl and mix together with sugar, lemon juice, vanilla, and zest and combine. Let stand for 2o minutes and pour over whipped creamed cake.
