Grilled Shrimp Kabobs


There is nothing like grilling in the summertime. I prefer to combine sweet with savory when grilling. Choose from a variety of vegetables.
 

Grilled Shrimp Kabobs
 
Here are the Ingredients
  • 1 pound of large shrimp, peeled and deveined
  • 1 large zucchini, cut into large chunks
  • 1 large red onion, cut into large chunks
  • 1 large red bell pepper, cut into large chunks
  • 1 fresh pineapple, cut into chunks (I use a whole  fresh pineapple and store the rest in the refrigerator for another recipe)
  • salt and pepper, to taste
  • Olive oil
  • Wood skewers, soaked in water for 15 minutes (helps prevent burning)
Take ingredients and alternate them on the skewer. Drizzle with olive oil and sprinkle with salt and pepper. Place on a prepared grill and cook for 4 minutes on each side. Serve with rice.
