Collard Greens

In the South it’s a tradition to eat collard greens and black eyed peas on the New Year to bring good luck and money throughout the year. Make them anytime they are in season. So good for you.

Collard Greens
Here are the Ingredients:
  • 1/4 cup olive oil
  • 2 tablespoons minced garlic
  • 5 cups chicken stock
  • 1/2 pound ham hock or bacon
  • 5 bunches collard greens – rinsed, trimmed and chopped
  • 1/2 tablespoon brown sugar
  • salt and black pepper to taste
  • 1 tablespoon crushed red pepper flakes
Heat olive oil in a large pot over medium heat. Add garlic and saute until light brown. Pour in the chicken stock and add the turkey leg. Cover the pot and simmer for 30 minutes. Add the collard greens to the cooking pot, and turn the heat up to medium-high. Let the greens cook down for about 45 minutes, stirring occasionally. Reduce heat to medium, and season with salt, pepper, and brown sugar. Continue to cook until the greens are tender and dark green, 45 to 60 minutes. Mix in red pepper flakes if desired.
