Want to eat light? This is quick and delicious.
Ingredients

3 oz chicken, diced

1/2 cup yellow squash, diced

1/2 cup zucchini, diced

1/2 cup mushrooms (any kind), diced

1/2 cup canellini beans, drained and rinsed

1/2 teaspoon Knorr homestyle concentrated chicken stock
-
1/2 cup water
Directions
Saute chicken in a nonstick pan with a little Pam until browned. Add all vegetables and saute for 2 minutes. Add beans and stir for 1 minute. Add chicken stock and let it start to melt. Add water and let simmer for 5 minutes. Drain in a colander and save juices. Put on plate and pour a small amount of juices over food and serve.
