Chicken and Vegetables

Want to eat light? This is quick and delicious.

  • 3 oz chicken, diced
  • 1/2 cup yellow squash, diced
  • 1/2 cup zucchini, diced
  • 1/2 cup mushrooms (any kind), diced
  • 1/2 cup canellini beans, drained and rinsed
  • 1/2 teaspoon Knorr homestyle concentrated chicken stock
  • 1/2 cup water
Saute chicken in a nonstick pan with a little Pam until browned. Add all vegetables and saute for 2 minutes. Add beans and stir for 1 minute. Add chicken stock and let it start to melt. Add water and let simmer for 5 minutes. Drain in a colander and save juices. Put on plate and pour a small amount of juices over food and serve.
