Chocolate Lava Cake

This cake oozes chocolate. Warm Chocolate Lava cake. It’s a perfect cake to share, especially with vanilla ice cream.

Chocolate Lava Cake
Here are the Ingredients:
  • 6 six ounce ramekins, prepared with and oil spray and dusted with cake flour
  • double boiler, or a pot and aluminum bowl
  • 2 sticks butter, unsalted at room temperature
  • 1/2 pound (8 oz) bittersweet chocolate (semi-sweet and regular chocolate is too sweet)
  • 1/2 cup sugar
  • 4 whole eggs
  • 4 egg yolks
  • 1 tablespoon plus 1 teaspoon cake flour
  • powdered sugar
Preheat oven 350
Fill pot with water and bring to a boil. Be sure that the water does not directly touch the bowl or double broiler. Place butter and chocolate in double boiler. Once melted remove from stove. Add sugar and whisk that in. Add all eggs one at a time and whisk that in. Add flour and whisk that in.Pour and equally divide into ramekins. Place in oven for 10 minutes or until sides are set and the center still jiggles. Remove from oven and let rest for 2 minutes. After two minutes hold with a towel and run knife around edges (as close to the edge as possible) to make it easier to unmold from ramekin. Take a plate and lie it on top, carefully flip it back over, jiggle and cake should come out in tact. Dust with powdered sugar and serve with fresh fruit and vanilla ice cream.
