Chicken Fajitas

I love hearing that sizzle when it hits the frying pan.

That sound instantly gives me a craving for a margarita! I guarantee this will be a hit at your dinner table.
  • 8 0z chicken breasts, thinly sliced
  • 1 cup red bell pepper, thinly sliced strips
  • 1 cup green bell pepper, thinly sliced strips
  • 1 cup yellow onion, thinly sliced strips
  • 2 green onions, diced
  • 1 avocado sliced, or guacamole (see recipe)
  • 1 cup cheddar cheese, grated
  • 1/2 cup cilantro, chopped
  • salsa (see recipe)
  • sour cream
  • 3 tablespoons fajita seasoning
  • 3 tablespoons canola oil
  • tortillas
Combine peppers, onions, chicken, seasoning, and oil together in a both. Mix until coated. Meanwhile heat a large skillet on high and toss in ingredients. Cook until meat is cooked around 20 minutes. Heat tortillas on an iron skillet or a frying pan until heated through. Serve with cilantro, salsa, sour cream, and cheese.

Easy Pita Pizza

Put this easy pita pizza in the oven for 8 minutes. It’s so thin and crunchy. Really light compared to your regular pizza dough.

Easy Pita Pizza
Here are the Ingredients:
  • Lebanese pita bread
  • 1/2 cup prepared pizza sauce
  • 1/2 cup fresh mozzarella, cut into small bites
  • 1/2 cup grape tomatoes, cut in half
  • 1/2 tablespoon basil, fresh or dried
Preheat oven at 350
Place pita bread on a pizza pan or baking sheet and spread with pizza sauce. Top with tomatoes, cheese, and basil, and bake for 8 minutes. Enjoy. So crunchy and delicious.

Peanut Butter Chocolate Chip Cookies

Peanut butter and chocolate. A pair made in heaven for us to enjoy.

Peanut Butter Chocolate Chip Cookies
Here are the Ingredients:
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup peanut butter
  • 1/4 cup shortening
  • 1/4 cup butter or margarine, softened
  • 1 egg
  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups chopped semisweet chocolate
Preheat oven at 375
Mix sugars, peanut butter, shortening, butter and egg in large bowl. Stir in all remaining ingredients. Cover and refrigerate about 1 hour. Shape dough into 1 1/4-inch balls. Place about 3 inches apart on a non-stick cookie sheet. Bake 9 to 10 minutes or until light golden brown. Cool on wire rack.

This recipe is easy to make and delicious. It’s a perfect afternoon snack with some Pita chips. This makes around five servings.

  • small garlic clove, chopped
  • 1 tablespoon fresh lemon juice
  • 4 oz Garbanzo beans, reserve liquid
  • 1 1/2 teaspoons Tahini
  • 1/4 teaspoon salt
  • pepper to taste
  • drizzle of olive oil
Place beans, garlic, tahini, salt, pepper, lemon juice, and 3 tablespoons reserved liquid in a blender. Blend until nice and creamy. Place in a bowl and pour a drizzle of olive oil on top. Serve with your favorite pita chips.

Parmesan Crusted Jumbo Shrimp

Shrimp is such a quick dish to make. You can buy them already peeled and cleaned or do them yourself like I prefer to do. These are delicious with an easy to make cocktail sauce. Great for parties.

Parmesan Crusted Jumbo Shrimp
Here are the Ingredients:
  • 1/2 pound Jumbo shrimp, peeled, deveined and rinsed, tails on
  • 1/4 cup Parmesan cheese, grated
  • 1/2 cup plain bread crumbs
  • 1 clove garlic, minced
  • 1/8 teaspoon sea salt
  • 1/8 fresh ground pepper
  • 2 tablespoons olive oil
  • 1 tablespoon horseradish, prepared
  • 1/4 cup ketchup
  • 2 tablespoons unsalted butter, melted
Preheat oven at 450
Clean shrimp. Combine garlic, salt and pepper, and olive oil. Toss in shrimp and coat well. Place in refrigerator and let marinade for 45 minutes. Prepare bread crumbs with Parmesan and toss in shrimp until well coated. Place on a baking sheet lined with nonstick foil. Drizzle with melted butter and bake for 10 minutes. Make cocktail sauce, (optional) with ketchup and horseradish and serve on the side. So delicious..enjoy!

  • 1 medium head of red cabbage cored and sliced thin
  • 1 medium onion chopped
  • 2 small apples cored and sliced
  • 4 small bay leaves
  • 1/2 cup sugar
  • 1 cup cider vinegar
  • 1 1/2 cups water
  • Salt and pepper to taste
In a Dutch oven, toss cabbage, onion, and apples. Add water, vinegar, sugar, salt, pepper, and bay leaves. Bring to a boil. Reduce heat; cover and simmer for 1-1/4 hours.

Buzz in Cooking

Southern style buttery grits and the shrimp with the combination of spices marry so amazingly well together. This is a definite favorite of mine and I’m sure it will be yours as well.

Shrimp and Grits
Here are the Ingredients:
  • 3 cups milk
  • 3 cups heavy cream
  • 1 cup grits
  • 2 tablespoons unsalted butter
  •  salt
  •  pepper
Heat the milk and cream and slowly whisk in the grits. Bring them to a slow boil and then simmer. Be sure to stir so it doesn’t stick or burn. Cook for 10 to 15 minutes until smooth and creamy. Remove from the heat and stir in the butter. It should be creamy and not to thick. Add more cream if you need to and then add salt and pepper.

I have a love for Seafood. Mussels with leeks, garlic, wine and butter. The best combo ever. This recipe has large homemade garlic croutons.

Steamed Mussels with Leeks and Garlic Croutons
This recipe is adapted from a favorite restaurant The Village Idiot
Here are the Ingredients:
  • 3 pounds mussels
  • olive oil
  • 3 tablespoons butter
  • 2 leeks, white parts only, finely chopped
  • 4 garlic cloves, minced
  • 1/4 bunch fresh thyme
  • 1 cup white wine
  • 1/4 cup chopped fresh flat leaf parsley
Rinse the mussels under cold running water while scrubbing with a vegetable brush. Remove the stringy mussel beards with your thumb and index finger as you wash them. Discard any mussels with broken shells.Heat 1 tablespoon olive oil and 1 tablespoon butter in a large pot over medium heat. Farmer Sandwich

This sandwich is packed with fresh vegetables and fresh cheese on Ciabatta bread from my hometown Italian deli. You have to give this a try.

Farmer Sandwich
Here are the Ingredients:
  • 1/2 roasted bell pepper, sliced (jarred whole)
  • 4 slices red onion, sliced thin
  • 1 large Roma tomato, diced
  • 1 small avocado, diced
  • 5 Calamata olives, pitted and sliced
  • 1/4 cup cucumbers, small slices
  • 1 oz feta cheese, crumbled
  • 2 oz fresh mozzarella, cubed
  • 2 Ciabatta bread
  • 1/2 roasted bell pepper, chopped
  • 2  1/2 tablespoons olive oil
  • 1 tablespoon plus 1 teaspoon white wine vinegar
  • 2 teaspoons mayonnaise
  • 2 teaspoons Parmesan cheese, grated
  • 1 clove garlic, crushed
  • 1/8 teaspoon dried basil
  • salt and pepper to taste
Put the first 8 ingredients in a medium size bowl. Place chopped peppers, oil, vinegar, mayonnaise, Parmesan cheese, garlic, basil and salt and pepper in blender. Process until smooth. Pour over mixture in the bowl, toss and chill. Slice Ciabatta bread in 1/2 length wise and add veggies. Enjoy.
