Chocolate Chip and Walnut Cookies


Don’t you adore warm cookies and milk. These are extra chocolatey.
 
 
Ooey gooey chocolatey nutty goodness. Be prepared to have chocolate fingers.
 
 
Chocolate Chip and Walnut Cookies
 
Here are the Ingredients:
  • 1/2 cup shortening
  • 1/4 cup white sugar
  • 1/2 cup brown sugar
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon baking soda
  • 1 1/4 cups flour
  • 8 oz chocolate chips
  • 1 cup walnuts, optional
  • 1 egg, beaten
Preheat oven 350 degrees
 
Cream shortening in a mixer then add sugars and egg. Dissolve baking soda in one tablespoons of HOT water then add and mix. Add flour, salt, vanilla and mix well. Add nuts and chocolate chips and mix again. Drop tablespoonfuls on greased cookie sheet. Bake for about 12 minutes.

Shrimp and Vegetable Tempura


What a delicious way to enjoy shrimp and vegetables.
 

Grab your chopsticks and enjoy them in a tasty Ponzu sauce.
 
 
Shrimp and Vegetable Tempura
 
Here are the Ingredients:
  • 3 cups vegetables, sliced or cut into chunks (green beans, broccoli florets, sweet potato, zucchini, mushrooms)
  • shrimp, peeled and deveined with tail in tact
  • tempura batter mix, in the Asian section at your local grocer or see recipe below
  • vegetable oil, for frying
  • Ponzu sauce, for dipping
Prepare tempura batter. Dip the vegetables and shrimp into the batter until coated and remove with tongs or chop sticks. Let the excess batter drain from the vegetables and shrimp back into the bowl and deep fry in hot oil on medium high until brown and crispy. Around 2-3 minutes. Be sure not to overcrowd. Place on a paper towel. Serve immediately by themselves or a dipping sauce.
 
Tempura Batter recipe
 
5 tablespoons all-purpose flour
5 tablespoons cornstarch
1 1/2 teaspoons baking powder
1 egg, beaten
3/4 cup iced water
 
Mix the dry ingredients in a bowl. Whisk the egg with the water, then stir into the dry ingredients to form a smooth batter.

Strawberry and Banana Smoothie


I started using coconut milk instead of soy or regular milk lately and thought I’d give it a try in a smoothie. I also put in a little flaxseed. Some call flaxseed one of the most powerful plant food on the planet.

Here are the Ingredients:
  • 1 cup coconut milk, vanilla flavor
  • 2 tablespoons low fat yogurt, vanilla flavor
  • 4 large fresh strawberries, frozen is fine too, cut in half
  • 1 medium banana, peeled
  • 1 teaspoon flaxseed
  • 3 ice cubes
Place all ingredients in a blender and blend until smooth.

Guacamole Dip


Mexican food is my all time favorite food and avocados are always such a fresh ingredient for salads and dips.

 

Mix in some fresh veggies and some homemade tortilla chips and you have a great anytime snack.

Here are the Ingredients:
  • 3 avocados
  • 1 lime, juiced
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon cayenne
  • 1/2 medium onion, diced
  • 2 Roma tomatoes, seeded and diced
  • 1 tablespoon chopped cilantro
  • 1 clove garlic, minced
Cut the avocados in half, remove pit, and spoon out fruit. Pour half the lime juice into avocado and mash until creamy. Add the remaining ingredients stir and chill before serving.

  • corn tortillas, cut into 2 inch long strips
  • 3/4 cup vegetable oil
  • kosher salt, to taste
  • lime fiesta salt free seasoning
Heat vegetable oil in a skillet on medium high heat. Carefully place in a few corn tortilla strips, don’t over crowd, flip with tongs until both sides are lightly browned and crispy. Drain on a paper towel lined plate. Immediately sprinkle with salt and seasoning.

Fruit Asian Fritters


Deep-fried fruits in tempura batter are so crisp and light on the outside and sweet and juicy on the inside.
 

It’s best to use firmer fruits like apples, pears, pineapple, mango, papaya, and kiwi. Be sure to dry the fruit before dipping in batter.

Mozzarella Bites


I came up with these because mozzarella sticks are one of my favorite appetizers when I eat out. These pack a huge flavor for such a small bite.
 

They are so easy to make and you can just pop them in your mouth.

Mozzarella Bites
 
Serving Size: 4
 
Here are the ingredients:
  • 20 cherry size mozzarella balls
  • 1 egg, beaten with a teaspoon of water
  • 1/2 teaspoon salt
  • 1 teaspoon Italian seasoning
  • 1/2 cup bread crumbs
  • vegetable oil
  • marinara sauce or pizza sauce for dipping
Beat one egg in a bowl with a splash of water. Pour bread crumbs in another bowl and season with salt and Italian seasoning. Place the mozzarella, a few at a time, in the egg mixture and then gently roll in the bread crumbs. Put on a plate and place in refrigerator for one hour. Heat oil on medium high and gently place in mozzarella bites. Do not walk away they cook fast. Cook for about one minute turning halfway through. While cooking spoon oil over the top. Remove pan from heat and then remove mozzarella with a slotted spoon and place on paper towels. Serve immediately with sauce.
 
 
 

Oreo Cookie Milkshake


I decided to make this milk shake with what I had on hand. I’ve been working on eating right, but I have to indulge myself everyday with something sweet. I bought some So Delicious Coconut Milk ice cream in Vanilla Bean flavor vs Yogurt or regular ice cream. Wow! So delicious!
 

Oreo Cookie Milkshake
 
Serves – 2
 
Here are the Ingredients:
  • 2 cups So Delicious Coconut milk ice cream vanilla bean, softened
  • 1/2 cup 2% milk
  • 3 Oreo cookies, crushed in a Ziploc bag with a rolling pin
Put ice cream and milk into the blender and mix until blended. Place in crushed cookies and pulse until incorporated. Pour into 2 tall glasses and serve immediately.
