Creamy Chicken and Pasta


This chicken is so creamy and delicious you’re gonna want to put this on your list of favorites.

Creamy Chicken and Pasta
 
2 Servings
 
Here are the Ingredients:
  • 1 tablespoon olive oil
  • 2 tablespoons butter, unsalted
  • 1 teaspoon garlic, chopped
  • 1/2 cup onion, chopped
  • 2 chicken breasts, butterflied and seasoned with salt and pepper
  • 1 cup heavy whipping cream
  • 1/4 cup Parmesan
  • 1 1/2 teaspoon chicken bouillon
  • 3/4 cup hot water
  • 2 scallions, chopped
  • your favorite pasta, linguini or spaghetti, cook per directions
Heat frying pan over medium heat and add olive oil, butter, and garlic. Be careful not to burn garlic. Add chicken until cooked through and juices run clear. Meanwhile cook pasta. Remove from pan and set aside. Add onions to the oil, butter, and garlic and saute until translucent. Add bouillon and water and cook for 10 minutes on a low simmer. Stir in cream, green onions, and Parmesan and cook for another 5 minutes. Slice chicken diagonally and lengthwise. Twirl pasta on a plate and top with chicken and pour sauce on top. Enjoy.

Piri Piri Shrimp with Pasta Salad


This spectacular dish from one of my favorite chefs Emeril made it to my blog. This is certainly a winner and has his signature heat packed Louisiana “New” New Orleans cooking! Be sure to make the Piri Piri sauce beforehand as it will take a week to acquire it’s delicious flavor.

Piri Piri Shrimp with Pasta Salad
 
Here are the Ingredients:
  • 1/4 cup Piri Piri (see recipe)
  • 5 cups Pasta Salad (recipe follows)
  • 32 large shrimp, about 2 pounds, cleaned and deveined, allow to 1 hour to marinade
  • 1 tablespoon Emeril’s Creole Seasoning (recipe follows)
Prepared Piri Piri. Make the pasta salad ahead of time and set aside. Toss shrimp with Piri Piri and creole seasoning and allow to marinade for one hour. Heat a large skillet over medium high heat. Add the shrimp in a single layer and cook for 2 minutes. Turn with tongs and cook for an additional minute. Top with pasta salad and cook for another minute without stirring. Remove from heat and toss. Divide shrimp evenly. Makes 4 servings.
 
Pasta Salad
 
Here are the Ingredients:
  • 4 cups cooked pasta
  • 1/3 cup pitted black olives, chopped
  • 1/3 cup pitted Calamata olives, chopped (Emeril calls for pimiento-stuffed green olives)
  • 1/4 cup green onions, chopped
  • 1/4 cup tomatoes, peeled and chopped
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon garlic, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons olive oil
  • 1/2 cup coarsely grated fresh Parmesan cheese
Toss all ingredients together in a bowl until well mixed. Leftovers should be refrigerated.
 
Emeril’s Creole Seasoning
 
Here are the Ingredients:
  • 2 1/2 tablespoons paprika
  • 2 tablespoons salt
  • 2 tablespoons garlic powder
  • 1 tablespoon black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon cayenne pepper
  • 1 tablespoon dried leaf oregano
  • 1 tablespoon dried leaf thyme
Combine all ingredients well and store in an airtight jar. Makes 2/3 cup.

Homemade Penne Pasta


There is something to be said about homemade pasta. See my pasta dough recipe to make this pasta. Penne is a favorite and it’s easier than it looks.

Take your time when making the pasta.

Try and make it square the same size.

Homemade Penne Pasta
 
Here are the Ingredients:
  • pasta dough, (see recipe)
  • small tubular instrument
  • rolling pin
  • 1 egg, beaten
  • flour, sprinkle board and pin
After making the pasta dough, be sure to roll it out fairly thin. Cut into 2×2 squares. Dab egg wash on one end at the corner and roll with tube from opposite corner and remove tube carefully. Meanwhile, bring salted water to a boil. When finished with all the pasta place in boiling water and cook for 15 minutes. Mix with your favorite sauce.

Penne Pasta and Spinach in a Creamy Cheese Sauce


Hopefully you take a chance on making your own pasta although store bought is a lot quicker.
 

Penne Pasta and Spinach in a Creamy Cheese Sauce
 
Here are the Ingredients:
  • homemade penne pasta, (see recipe)
  • 4 cups baby spinach, washed
  • 2 oz goat cheese
  • 1 oz cream cheese
  • 1 tablespoon heavy whipping cream
  • 2 tablespoons Parmesan, grated
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
Make your homemade pasta (or packaged) and mix it with this amazing sauce. Add the goat cheese, cream cheese, heavy whipping cream, 1 teaspoon of salt, 1/2 teaspoon of pepper, and half of the spinach leaves into a food processor. Blend until the mixture is smooth and creamy. Place the remaining spinach leaves in a large bowl. Drain the pasta, and spoon the pasta on top of the spinach in the bowl. Add the cheese and spinach mixture over the pasta mixture and toss to coat. Taste and season with more salt and pepper necessary. Top with Parmesan and serve.

Basic Pasta Dough Recipe


Let’s all make our own pasta. If you don’t have a pasta press you can always to it by hand with a rolling pin.
 

Basic Pasta Dough Recipe
 
Here are the Ingredients:
  • 3 1/2 to 4 cups all-purpose flour
  • 4 extra-large eggs
  • 1/2 teaspoon extra-virgin olive oil
Mound 3 1/2 cups of the flour in the center of a large wooden cutting board. Make a well in the middle of the flour and add the eggs and olive oil. Using a fork, beat together the eggs and oil and begin to incorporate the flour, starting with the inner rim of the well. As you expand the well, keep pushing the flour up from the base of the mound to retain the well shape.
The dough will come together when half of the flour is incorporated. At this point, start kneading the dough with both hands, using the palms of your hands.
Once there is a cohesive mass, remove the dough from the board and scrape up and discard any leftover bits. Lightly reflour the board and continue kneading for 6 more minutes. The dough should be elastic and a little sticky.
Wrap the dough in plastic and allow to rest for 30 minutes at room temperature.
Roll or shape as desired.
