Strawberry and Spinach Salad w/ Pistachios


Such a delightful salad. Who knew that pistachios would go so well with this combo. I decided to try it since I bought a huge bag from my local warehouse store.

Strawberry and Spinach Salad w/ Pistachios
 
Serves 2
 
Here are the Ingredients:
  • 4 cups baby spinach, rinsed and drained
  • 1 cup strawberries, topped and quartered
  • 1/4 cup roasted pistachios, shelled
  • 1/4 cup avocado oil, or olive oil
  • 1 tablespoon sesame seeds
  • 1/2 tablespoon poppy seeds
  • 1.5 tablespoons white sugar
  • 1.5 tablespoons distilled white vinegar
  • 1 teaspoon balsamic vinegar
  • small splash of Worcestershire
  • 1/2 tablespoon minced onion
Whisk together the last 7 ingredients. Slowly whisk in oil until well blended. Place in refrigerator until chilled. At least 30 minutes. Toss together strawberries, spinach, and pistachios with desired amount of dressing (around 4 tablespoons) and serve. If you want to add protein it’s very good with grilled chicken.
 
 

Four Bean Salad


If you’re looking for a meatless meal with lots of protein and tons of flavor, this is the salad for you.

Here are the Ingredients:
  • 15 oz can Garbanzo Beans
  • 15 oz can Black Beans
  • 15 oz can Pinto Beans
  • 15.25 oz can Kidney Beans
  • 1.5 cups frozen corn, defrosted
  • 1/3 cup fresh pomegranate seeds
  • 1 small red bell pepper, diced
  • 1/4 cup olive or avocado oil
  • 1/4 cup shallots, finely chopped
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon cumin
  • 1 teaspoon salt
  • 2 pinches of sugar
Pour all beans into a colander and rinse thoroughly until water runs clear and allow to drain.  In a large bowl combine the last 6 five ingredients with a whisk. Slowly whisk in oil until combined. Add all the remaining ingredients and toss until well coated. Refrigerate until chilled and serve.
 

Grilled Lemon Pepper Shrimp over Salad Greens and Vegetables


It’s too hot to cook a huge meal in the house so bring on the grill. Shrimp over a cold salad has always been a favorite. Grilled with these beautiful flavors steps it up a notch. Hope you try and enjoy!
 

Grilled Lemon Pepper Shrimp over Salad Greens and Vegetables
 
Serves 2
 
Here are the Ingredients:
  • 24 large shrimp, peeled and deveined
  • 3 cups iceberg lettuce, chopped
  • 6 cherry tomatoes, sliced
  • 1 Persian cucumber, diced
  • 1 green onion, chopped
  • 1 cup frozen Trader Joe’s Soycutash medley, defrosted
  • 2 tablespoons ranch dressing
  • 2 tablespoons Italian dressing
  • Spray Pam
  • 1/2 teaspoon salt or to taste
  • lemon pepper
  • skewers, metal or wood, (if wood soak for 15 minutes so they won’t burn)
Prepare salad and refrigerate. Combine dressings and mix well. Pat shrimp dry with a paper towel and spray with Pam.  Season with salt and lemon pepper on both sides. Place shrimp on skewers. Grill for 3 minutes per side. Toss the salad with dressing and top with grilled shrimp. Enjoy!
 
 
 

Refreshing Cucumber and Tomato Salad


Cool your summer palate with this yummy cucumber and tomato combo. Mixed with the zesty juice of a lemon and the bite of a jalapeno, you’re going to love it.

  • 5 Persian cucumbers, diced
  • 2 large vine ripened tomatoes, diced
  • 1/2 small jalapeno, seeded and finely diced
  • 2 green onions, diced
  • 2 tablespoons cilantro, chopped
  • 2 tablespoons lemon juice. fresh squeezed
  • 1 tablespoon avocado oil, or olive oil
  • salt and pepper to taste
Mix the following ingredients and serve chilled.

Homegrown Tomatoes and Mozzarella


Fresh Insalata Caprese salad on a hot day is so refreshing.
 

I enjoy the flavor of cilantro so I use it as a substitute for basil which of course is just as delicious.

Here are the Ingredients:
  • vine-ripened tomatoes, sliced
  • fresh mozzarella, sliced
  • cilantro, chopped slightly
  • 1 teaspoon white wine vinegar
  • 1/2 teaspoon avocado oil, or olive oil
  • kosher salt
Whisk vinegar and oil and splash it over the sliced tomatoes, mozzarella, and cilantro. Lightly sprinkle with kosher salt and enjoy.

So fresh and so easy. An absolute perfect way to start off a lovely Italian meal.

  • 20 Grape tomatoes, keep whole
  • 12 Cherry Mozzarella, kept whole
  • 5 leaves Basil, chiffonade
  • 1/2 tablespoon avocado oil
  • 1 tablespoon white wine vinegar
  • salt and pepper to taste
Place all ingredients into a medium bowl toss with fingers. Serve chilled

Cucumber, Tomato, and Avocado Salad


A trio meant to go together. A simple salad, not so simple in flavor. This is so easy and fresh.

Here are the Ingredients:
  • 4 Persian cucumbers, diced (if not available use and English cucumber)
  • 1 large ripe avocado, diced
  • 2 medium vine ripened tomatoes, diced
  • 1 small red onion, sliced thin
Toss together with a nice Blush Wine Vinaigrette and serve chilled.

Arugula Salad with Chicken and Mandarin


These flavors pair so well together and wow so fresh.

Here are the Ingredients:
  • 2 tablespoons brown sugar
  • 2 teaspoons soy sauce
  • 1 tablespoon sesame oil
  • 1/4 cup vegetable oil
  • 3 tablespoons rice vinegar
  • 1 bag of arugula rinsed and dried
  • 4 boneless chicken breast halves, grilled and sliced on the diagonal
  • 3 green onions, chopped
  • 1 (11 ounce) can of mandarin oranges drained
  • 1 tablespoon sesame seeds, toasted
  • Parmesan cheese
Prepare the dressing 30 minutes ahead of time by combining the brown sugar, soy sauce, sesame oil, salad oil, and rice vinegar and mix well. In a large bowl combine the grilled and sliced chicken, mandarin oranges, green onions and toasted sesame seeds. Place arugula on plate and top with chicken mixture. Pour the dressing over the salad to taste and sprinkle with Parmesan cheese and serve immediately.

German Potato Salad


This is a nice change from your typical mayo style potato salad. This seems more like a salad since it’s made with vinegar and oil.

Here are the Ingredients:
  • 5 medium russet potatoes
  • 1 medium sweet onion chopped
  •  1/4 cup vegetable oil
  • 3 tablespoon white vinegar
  •  1 1/2 tsp salt
  • 1 teaspoon pepper
Clean potatoes and boil with skin on for around 20 minutes until done and allow to cool completely. When cool peel off skin and cut 1/8 inch thick slices. Add chopped onions, oil, vinegar, salt and pepper and lightly toss together. Serve chilled or at room temperature.
