Roasted Asparagus

This is a perfect and quick side dish that goes well with any meat or pasta.

  • 2 pounds asparagus
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 teaspoons Olive oil
  • 2 teaspoons lemon juice, fresh squeezed
  • 1/3 cup Parmesan cheese, freshly grated (optional)
Preheat oven 450
Hold the end of the asparagus stalks and bend until it snaps off. Toss asparagus with olive oil, sprinkle with salt and pepper, and toss well. Arrange asparagus in an even layer in a shallow baking dish. Sprinkle with parmesan cheese and bake until asparagus is crisp-tender and cheese is browned, about 10 minutes. Sprinkle with lemon juice.
